½ teaspoon ground ginger

½ cup granulated sugar

½ cup packed brown sugar

1 cup canned pumpkin puree

½ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

½ cup chopped walnuts or pecans (optional)

For the topping:

¼ cup granulated sugar

1 teaspoon ground cinnamon

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup.

    Whisk Dry Ingredients: In a medium-sized mixing bowl, sift together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, nutmeg, and ginger. Whisk thoroughly to ensure the spices are evenly distributed, then set aside.

      Mix Sugars and Wet Ingredients: In a large mixing bowl, combine both the granulated sugar and packed brown sugar. Add the pumpkin puree and blend well until the mixture is smooth and creamy. Next, incorporate the vegetable oil, eggs, and vanilla extract. Whisk everything together until fully combined and creamy in texture.
