4 medium zucchinis, spiralized into noodles

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, packed lightly

1/4 cup pine nuts, toasted until golden

1/2 cup high-quality extra virgin olive oil

2 cloves garlic, finely minced

1/2 cup freshly grated Parmesan cheese

Salt and freshly ground black pepper, to taste

1 tablespoon fresh lemon juice (optional, for an extra burst of brightness)

Instructions
 

Prepare the Pesto: In a food processor, combine the fresh basil leaves, toasted pine nuts, minced garlic, and grated Parmesan cheese. Pulse the mixture until it's finely chopped. While the processor is running, slowly drizzle in the olive oil until everything is well blended and smooth. Taste, and season with salt and freshly ground black pepper to your preference.

    Create the Zucchini Noodles: Using a spiralizer, transform the zucchinis into long, noodle-like strands. If you don’t have a spiralizer, a julienne peeler will work just as well to achieve similar results.

      Mix the Salad Ingredients: In a large mixing bowl, gently combine the zucchini noodles, halved cherry tomatoes, and halved mozzarella balls. Make sure they are evenly distributed.

        Incorporate the Pesto: Carefully drizzle your homemade pesto over the zucchini noodle mixture. Using tongs or a large spoon, toss the salad gently until all the ingredients are well-coated. If you enjoy a bright citrus flavor, add the fresh lemon juice at this point and toss again.
