For the Meatballs:

1 lb ground turkey

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh basil, finely chopped

2 cloves garlic, minced

1 large egg

1 tsp salt

1/2 tsp black pepper

1 tsp Italian seasoning

For the Skillet:

1 tablespoon olive oil

1 cup cherry tomatoes, halved

1 cup fresh spinach

1/2 cup pesto (store-bought or homemade)

1/4 cup heavy cream (optional, for a creamier sauce)

Salt and pepper to taste

Fresh basil leaves or extra grated Parmesan for garnish

Make the Meatballs:

    In a large mixing bowl, thoroughly combine the ground turkey, whole wheat breadcrumbs, grated Parmesan cheese, finely chopped basil, minced garlic, egg, salt, black pepper, and Italian seasoning. Mix well until the ingredients are evenly distributed.

      Shape the Meatballs:

        With your hands, scoop out portions of the mixture and roll them into small meatballs, each about 1 inch in diameter. You should end up with approximately 20-24 meatballs.

          Cook the Meatballs:

            Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, carefully add the meatballs in batches to the skillet. Cook them for about 5-6 minutes, turning occasionally, until they are browned on all sides and cooked through. Remove the meatballs from the skillet and set them aside on a plate.

              Prepare the Skillet:

                In the same skillet, add the halved cherry tomatoes. Sauté for about 3-4 minutes or until they begin to soften and release their juices. Then, add the fresh spinach and cook for an additional 2 minutes, stirring until the spinach is wilted.

                  Combine Ingredients:

                    Return the cooked meatballs to the skillet with the tomatoes and spinach. Stir in the pesto, mixing well to coat the meatballs and vegetables. For a creamier texture, drizzle in the heavy cream and stir until combined. Allow everything to heat through for another 2-3 minutes. Taste and adjust with salt and pepper as necessary.

                      Serve:
