4 ripe peaches, pitted and chopped

2 cups brewed black tea, cooled (sweetened for extra flavor, if preferred)

1/2 cup granulated sugar (adjust according to taste)

Juice of 1 lemon

1 teaspoon vanilla extract

Fresh mint leaves, for garnish (optional)

Prepare the Tea: Begin by brewing 2 cups of black tea through your preferred method, whether it be using tea bags or loose leaf. You may choose to sweeten the tea to enhance the flavor, but for a more authentic peach taste, consider leaving it unsweetened. Allow the brewed tea to cool completely at room temperature or refrigerate to speed up the process.

    Blend the Peaches: While the tea is cooling, place the chopped peaches into a blender or food processor. Blend until the mixture is smooth. If you enjoy a bit of texture in your granita, pulse the peaches a few times instead of blending fully, leaving small chunks intact.

      Mix the Ingredients: In a sizable mixing bowl, combine the peach puree with the cooled tea, granulated sugar, lemon juice, and vanilla extract. Stir thoroughly until the sugar has entirely dissolved into the mixture. Taste the blend and adjust the sweetness or acidity by adding more sugar or lemon juice as per your preference.

        Freeze the Mixture: Transfer the well-mixed peach and tea concoction into a shallow dish, preferably metal, as it conducts heat away quickly. Place the dish in the freezer.

          Scrape the Granita: After approximately 30 minutes, use a fork to scrape the surface of the mixture, breaking it apart to create a fluffy texture. Return it to the freezer and repeat this scraping process every 30 minutes for about 2 to 3 hours. Continue until the entire mixture is light and fluffy, resembling ice granules.
