1/2 cup brown sugar, packed firmly

1/4 cup coconut oil, melted (or use unsalted butter)

1/4 teaspoon salt

1/2 teaspoon pure vanilla extract

2 cups fresh peaches, diced (approximately 2 medium peaches)

1 cup fresh raspberries

1 tablespoon cornstarch

2 tablespoons honey or maple syrup (optional, for extra sweetness)

1/2 teaspoon ground cinnamon

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease an 8x8 inch square baking dish or line it with parchment paper for easier removal later on.

    Create the Oat Crust: In a large mixing bowl, combine the rolled oats, almond flour, brown sugar, melted coconut oil, salt, vanilla extract, and ground cinnamon. Stir the mixture until it becomes well combined and crumbly.

      Form the Crust: Set aside about 1/2 cup of the oat mixture for the topping. Evenly press the remaining oat mixture into the bottom of the prepared baking dish to form a solid crust layer. Bake in the preheated oven for 10 minutes.

        Prepare the Fruit Filling: While the crust is baking, take a medium bowl and mix together the diced peaches, raspberries, cornstarch, and if desired, honey or maple syrup. Gently toss the fruit until it's evenly coated with cornstarch.
