2 ripe peaches, thinly sliced

1 cup shredded mozzarella cheese

1 cup cream cheese, softened to room temperature

2 tablespoons honey

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon butter (for cooking)

Fresh mint leaves (for garnish, optional)

Prepare the Cream Cheese Mixture: In a medium mixing bowl, combine the softened cream cheese, honey, vanilla extract, and ground cinnamon. Use an electric mixer or a spatula to mix until the mixture is smooth and evenly blended. Set aside.

    Assemble the Quesadillas: On a clean surface, take two flour tortillas and lay them flat. Using a spatula, evenly spread half of the cream cheese mixture onto each tortilla, making sure to cover them completely. Next, layer the thin peach slices on top of the cream cheese, followed by a generous sprinkle of shredded mozzarella cheese. Finally, place the remaining two tortillas on top to create two filled quesadillas.

      Cook the Quesadillas: Heat a large skillet over medium heat and add 1 tablespoon of butter. Once the butter has melted and is bubbling, carefully place one quesadilla in the skillet. Cook for 3-4 minutes or until the bottom is golden brown and the cheese begins to melt. Gently flip the quesadilla and cook the other side for an additional 3-4 minutes. Remove the first quesadilla from the skillet and repeat the cooking process with the second quesadilla.
