2 cups cooked, shredded chicken breast

2 ripe peaches, pitted and cut into thin slices

1 cup fresh basil leaves, gently torn

1 cup mixed greens (such as arugula, spinach, or your personal favorite)

½ cup feta cheese, crumbled into small pieces

½ cup cherry tomatoes, cut in half

¼ cup walnuts or pecans, coarsely chopped (optional for added texture)

¼ cup red onion, thinly sliced for a mild sharpness

4 tablespoons extra virgin olive oil

2 tablespoons apple cider vinegar for tang

1 tablespoon honey to balance flavors

Salt and pepper to taste

Prepare the Chicken: If you haven't done so already, cook the chicken breast by grilling, baking, or boiling until it is fully cooked and reaches an internal temperature of 165°F (75°C). Once cooked, allow the chicken to cool, then shred it into bite-sized pieces using two forks.

    Make the Dressing: In a small mixing bowl, combine the olive oil, apple cider vinegar, honey, and a generous pinch of salt and pepper. Whisk vigorously until all ingredients are well mixed and the dressing thickens slightly. Taste and adjust seasoning if necessary.

      Build the Salad Base: In a large mixing bowl, add the mixed greens followed by the shredded chicken, peach slices, cherry tomatoes, and thinly sliced red onion.

        Incorporate Cheese & Nuts: Gently fold in the crumbled feta cheese and chopped walnuts or pecans to introduce a satisfying crunch and creaminess to the salad.
