Ingredients

1 cup grated zucchini (approximately 1 medium zucchini, well-drained)

1 cup almond flour

1/2 cup unsweetened cocoa powder

1/2 cup pure maple syrup or honey

1/4 cup coconut oil, melted for easy mixing

3 large eggs

1 teaspoon pure vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon sea salt

1/2 cup dark chocolate chips (ensure dairy-free for strict Paleo adherence)

Optional: chopped nuts (like walnuts or pecans) or shredded coconut for topping

Instructions

Preheat the Oven: Set your oven to 350°F (175°C). Prepare an 8x8-inch baking dish by lining it with parchment paper, ensuring there is enough overhang on the sides for easy removal once baked.

Prepare the Zucchini: Use a box grater or a food processor to grate the zucchini. After grating, transfer it to a clean kitchen towel. Gather the towel around the zucchini and twist to wring out as much moisture as possible. This will help keep the brownies from becoming soggy.

Mix Dry Ingredients: In a large mixing bowl, add the almond flour, cocoa powder, baking soda, and sea salt. Whisk them together thoroughly until well combined, ensuring there are no clumps of cocoa powder.

Combine Wet Ingredients: In a separate mixing bowl, whisk together the melted coconut oil, maple syrup (or honey), eggs, and pure vanilla extract until the mixture is smooth and fully blended.

Combine Mixtures: Gradually pour the wet ingredients into the dry ingredients, mixing gently with a spatula or wooden spoon until just combined—do not overmix. Carefully fold in the prepared grated zucchini and dark chocolate chips. If desired, add in any chopped nuts or shredded coconut.

Bake: Spread the brownie batter evenly into the prepared baking dish using a spatula. Place the dish in the preheated oven and bake for 25-30 minutes. To check for doneness, insert a toothpick into the center; it should come out with a few moist crumbs but not wet batter.

Cool and Slice: Once baked, remove the brownies from the oven and let them cool in the baking dish for about 10 minutes. Using the parchment overhang, lift the brownies out of the dish and transfer them to a wire rack to cool completely before cutting them into squares.

Serve: Indulge in these rich and fudgy brownies as a healthy dessert or a guilt-free snack option!
