Ingredients

1 lb (450g) store-bought gnocchi

1 cup cherry tomatoes, halved

2 cups fresh spinach, roughly chopped

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1 cup vegetable broth

1/2 cup grated Parmesan cheese, plus extra for serving

2 tablespoons olive oil

2 cloves garlic, minced

Salt and black pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions

Sauté Aromatics: In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Watch closely to prevent burning.

Add Gnocchi: Carefully stir in the gnocchi, ensuring each piece is coated with the aromatic garlic oil. Sauté for approximately 2 minutes to enhance their flavor.

Combine Liquids: Pour in the vegetable broth and heavy cream, stirring well to blend all ingredients smoothly.

Add Pesto and Tomatoes: Introduce the basil pesto and halved cherry tomatoes into the pot. Bring the mixture to a gentle simmer over medium heat, stirring occasionally to avoid sticking.

Cook the Gnocchi: Allow the gnocchi to simmer for about 5-7 minutes. They are ready when they float to the surface and are tender. Stir frequently to ensure even cooking and prevent sticking to the pot.

Incorporate Spinach and Cheese: After the gnocchi are cooked, reduce the heat to low. Add the roughly chopped spinach and grated Parmesan cheese, stirring gently until the spinach wilts and the cheese melts, creating a luscious, creamy sauce.

Season to Taste: Season the dish with salt and black pepper according to your taste preferences. Stir well to distribute the seasoning evenly.

Serve: Once ready, remove the pot from the heat and let the dish sit for a minute to thicken slightly. Serve hot, garnished with additional grated Parmesan cheese and fresh basil leaves for a pop of color and flavor.
