Ingredients

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

4 cups low-sodium chicken broth

12 ounces fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh spinach, chopped (optional)

Fresh parsley, chopped, for garnish

Instructions

Sauté the Chicken: In a large pot, heat the olive oil over medium heat. Once the oil is shimmering, add the bite-sized chicken pieces. Season them generously with salt, pepper, and Italian seasoning. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Once done, remove the chicken from the pot and set it aside on a plate.

Sauté Garlic: In the same pot, add the minced garlic. Sauté for about 30 seconds, stirring constantly, until the garlic is fragrant and slightly golden but not burnt, which can lead to a bitter taste.

Add Broth and Pasta: Carefully pour in the low-sodium chicken broth, bringing it to a simmer. Once simmering, add the fettuccine pasta, ensuring it is well submerged in the broth. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed some of the flavorful broth.

Combine Ingredients: After the pasta is cooked, stir in the heavy cream and grated Parmesan cheese. Mix thoroughly until the sauce reaches a creamy and smooth consistency. If you're using spinach, now is the time to add it—stir until the spinach is wilted and incorporated into the pasta.

Return Chicken to the Pot: Place the cooked chicken back into the pot, mixing everything until it's evenly combined. Allow the dish to simmer for an additional 2-3 minutes, just to heat everything through and meld the flavors.

Garnish and Serve: Remove the pot from heat and garnish the dish generously with chopped fresh parsley. Serve hot and enjoy the rich, creamy deliciousness that is sure to please!

              Prep Time: 10 minutes | Total Time: 30 minutes | Servings: 4-6

Presentation Tips: Serve the pasta in shallow bowls, garnished with extra Parmesan cheese and a sprinkle of black pepper for added flavor and visual appeal. Enjoy!
