1 can (14.5 oz) diced tomatoes with green chilies

2 ½ cups chicken broth

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon dried thyme

½ teaspoon paprika

2 tablespoons olive oil

Salt and pepper to taste

½ cup heavy cream (optional, for a creamy version)

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions
 

Brown the Sausage: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the sliced sausage and cook until browned, approximately 4-5 minutes. Once browned, remove the sausage from the pot and set aside.
