2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

1 red bell pepper, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for an extra kick)

2 tablespoons olive oil

1/4 cup chicken or vegetable broth

2 cups fresh spinach or kale, roughly chopped

Fresh parsley, chopped (for garnish)

Prepare the Sweet Potatoes: Heat 1 tablespoon of olive oil in a large non-stick skillet or cast-iron pan over medium heat. Once the oil is shimmering, add the diced sweet potatoes, ensuring they're spread out in an even layer. Season them with a pinch of salt and pepper. Sauté for approximately 10-12 minutes, stirring occasionally, until the sweet potatoes are tender and have developed a light golden crust.

    Cook the Turkey: Push the cooked sweet potatoes to one side of the pan. Add the remaining tablespoon of olive oil to the empty space.
