Ingredients

4 salmon fillets (6 ounces each), skin on

2 cups fresh asparagus, trimmed and cut into 2-inch pieces

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 cup cherry tomatoes, halved

4 tablespoons extra virgin olive oil, divided

3 tablespoons fresh lemon juice

Zest of 1 medium lemon

2 cloves garlic, finely minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and freshly ground black pepper, to taste

Fresh parsley, finely chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to create the perfect cooking environment for your salmon and vegetables.

Prepare the Vegetables: On a large, rimmed baking sheet, arrange the trimmed asparagus, sliced red and yellow bell peppers, and halved cherry tomatoes in an even layer. Drizzle with 2 tablespoons of olive oil, then sprinkle with salt and pepper. Use your hands to toss the veggies gently until they are generously coated in the oil and seasonings.

Make the Marinade: In a small mixing bowl, whisk together the remaining 2 tablespoons of olive oil, fresh lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, and a pinch of salt and pepper. Mix well until all the ingredients are thoroughly combined.

Add the Salmon: Place the salmon fillets skin-side down on the baking sheet among the vegetables. Using a brush or spoon, generously coat each fillet with the lemon herb marinade, making sure each one is well covered.

Bake: Once prepared, transfer the baking sheet to your preheated oven. Bake for about 15-20 minutes, or until the salmon is opaque and flakes easily with a fork, while the vegetables are tender-crisp. Keep an eye on the dish to avoid overcooking.

Serve: After baking, remove the dish from the oven and let it rest for a minute. Garnish the salmon and vegetables with freshly chopped parsley for a pop of color and aroma. Serve with lemon wedges on the side to add an extra zesty flavor when desired.
