1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup long-grain white rice, thoroughly rinsed and drained

1 medium onion, finely diced

3 cloves garlic, minced

1 cup bell pepper (any color), diced

1 cup corn (fresh or frozen)

2 cups low-sodium chicken broth

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 1/2 cups shredded sharp cheddar cheese

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Once hot, add the bite-sized chicken pieces. Season with smoked paprika, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is nicely browned and cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.

    Cook Vegetables: In the same skillet, add the diced onion and diced bell pepper. Sauté for approximately 3-4 minutes until they begin to soften. Then, stir in the minced garlic and cook for an additional minute, allowing it to become fragrant.

      Combine Ingredients: To the skillet, add the rinsed rice, corn, and Italian seasoning. Pour in the chicken broth, stirring to combine all the ingredients. Increase the heat to bring the mixture to a gentle boil.

        Simmer: Once the mixture reaches a boil, reduce the heat to low. Cover the skillet with a lid and allow it to simmer for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid. Check the rice occasionally to ensure it doesn’t stick to the bottom; add a splash more broth or water if needed.

          Add Chicken and Cheese: After the rice has cooked through, return the sautéed chicken to the skillet. Mix everything thoroughly to combine. Then, generously sprinkle the shredded cheddar cheese over the top. Cover once more and let it sit for about 5 minutes, or until the cheese has melted and is starting to bubble.
