Ingredients

For the Crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/3 cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened at room temperature

1/2 cup powdered sugar

1 cup heavy whipping cream, cold

1 teaspoon vanilla extract

For the S’mores Topping:

1 cup mini marshmallows

1/2 cup milk chocolate chips

1/4 cup crushed graham crackers

Optional: toasted marshmallows for garnish

Instructions

Prepare the Crust:

In a mixing bowl, combine graham cracker crumbs and granulated sugar, then pour in the melted butter. Mix until the mixture is well combined and resembles wet sand. Carefully spoon equal portions of this crust mixture into the bottom of each jar, then press it down gently with the back of a spoon to form an even layer.

      Make the Cheesecake Filling:

In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it’s creamy and smooth. Gradually add the powdered sugar, mixing continuously until just combined. In a separate chilled bowl, whip the heavy cream and vanilla extract together until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined, being careful not to deflate the whipped cream.

          Assemble the Jars:

Using a piping bag or a spoon, add the cheesecake filling on top of the crust layer in each jar, filling them about three-quarters of the way full. Tap the jars gently on the counter to remove any trapped air bubbles.

              Add the Toppings:

Distribute the mini marshmallows evenly over the cheesecake filling, then sprinkle crushed graham crackers and milk chocolate chips on top.

                  Toast the Marshmallows:

For that signature s'mores flavor, utilize a kitchen torch to lightly toast the marshmallows until they turn golden brown. Be sure to keep a close watch to prevent burning. Alternatively, if you don’t have a torch, you can place the jars under a broiler for about 1-2 minutes; just keep a vigilant eye on them to avoid burning!

                      Chill:

Seal the jars with lids or cover them with plastic wrap. Refrigerate for a minimum of 2 hours, or overnight if possible, to allow the flavors to meld and the cheesecake filling to set properly.

                          Serve:

When ready to serve, you can add a few additional chocolate chips or a sprinkle of graham cracker crumbs on top. For an extra special touch, toast a marshmallow and place it atop each jar for decoration.

Prep Time: 20 minutes | Total Time: 2 hours 20 minutes | Servings: 6-8 jars
