1 cup fresh blueberries, rinsed and drained

1 cup lemon yogurt (either Greek or regular)

1/2 cup cream cheese, softened to room temperature

1/4 cup powdered sugar, sifted

1 tablespoon freshly squeezed lemon juice

1 teaspoon lemon zest

1/2 teaspoon pure vanilla extract

1 cup crushed graham crackers, for the crust

1/4 cup unsalted butter, melted and slightly cooled

Fresh mint leaves, for garnish (optional)

Prepare the crust: In a medium mixing bowl, combine the crushed graham crackers with the melted butter. Stir the mixture until it resembles wet sand. Evenly distribute this crust mixture among four serving cups or small dessert bowls, pressing it down firmly with the back of a spoon to create a compact, even layer.

    Make the filling: In a large mixing bowl, use a hand mixer to beat the softened cream cheese and sifted powdered sugar together until the mixture is smooth and creamy, without lumps. Add in the lemon yogurt, freshly squeezed lemon juice, lemon zest, and vanilla extract. Continue mixing until the ingredients are fully combined, light, and fluffy.

      Layer the cups: Carefully spoon the lemon yogurt mixture over the prepared graham cracker crust in each cup, filling them about three-quarters full. Use a spatula to smooth the tops for an even finish.
