2 medium Japanese eggplants (or 1 large globe eggplant)

3 tablespoons white miso paste

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon mirin (or rice vinegar)

1 tablespoon honey or maple syrup

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1 tablespoon sesame seeds (for garnish)

2 green onions, finely chopped (for garnish)

Fresh cilantro leaves (for garnish, optional)

Instructions
 

Prepare the Eggplants: Slice each eggplant in half lengthwise. Using a knife, lightly score the flesh in a crisscross pattern while avoiding cutting through the skin. This scoring technique allows the marinade to soak in deeply and ensures even cooking.

    Make the Miso Glaze: In a medium-sized mixing bowl, whisk together the white miso paste, soy sauce, sesame oil, mirin (or rice vinegar), honey (or maple syrup), minced garlic, and grated ginger. Continue to whisk until the mixture is smooth and well blended.

      Marinate the Eggplants: Generously brush the miso glaze over the cut sides of the eggplants, making sure to coat them thoroughly. Transfer the eggplants to a shallow dish, cover, and let them marinate for at least 30 minutes at room temperature, or for up to 2 hours in the refrigerator to allow the flavors to intensify.

        Preheat the Oven: Preheat your oven to 400°F (200°C) so it is ready for roasting.

          Roast the Eggplants: Line a baking sheet with parchment paper and place the marinated eggplants cut side up on the sheet. Roast in the preheated oven for about 25-30 minutes, or until the eggplants are tender and exhibit a slight caramelization around the edges.

            Broil for a Finish (Optional): For an enhanced char and added depth of flavor, switch the oven to broil for an additional 3-5 minutes. Be vigilant during this step to prevent burning, as it can happen quickly.
