Mini Roasted Pepper Chicken Wraps

2 large chicken breasts, grilled and sliced

1 cup mini sweet peppers, roasted and sliced

1 cup baby spinach leaves, thoroughly washed and dried

1 cup feta cheese, crumbled

4 large whole wheat or spinach tortillas

1/2 cup hummus (your choice of flavor)

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon smoked paprika

Fresh basil leaves for garnish (optional)

Prepare the Chicken: In a bowl, season the sliced grilled chicken with olive oil, salt, pepper, and smoked paprika. Mix well to ensure each piece is evenly coated. Set the chicken aside for 10-15 minutes to allow the flavors to develop.

    Roast the Peppers: If starting with raw mini sweet peppers, preheat your oven to 400°F (200°C). Slice the mini peppers in half lengthwise and remove the seeds. Arrange them cut-side up on a baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt and pepper. Roast for approximately 20 minutes or until the peppers are tender and have developed a slight char. Once roasted, remove from the oven, let cool, and then slice them into strips.

      Warm the Tortillas: Heat a dry skillet over medium heat. Warm each tortilla for about 30 seconds on one side, then flip and warm for another 30 seconds. This will make the tortillas more pliable for wrapping.

        Spread the Hummus: Lay each tortilla flat on a clean surface. Spread a generous layer of hummus across the entire surface of each tortilla, leaving a little space at the edges to avoid spillage.

          Assemble the Wraps: On top of the hummus, layer a handful of fresh spinach leaves, followed by the seasoned grilled chicken slices, roasted mini pepper strips, and a sprinkle of crumbled feta cheese.

            Wrap It Up: Starting from one edge, carefully roll each tortilla tightly away from you, tucking in the sides as you go to keep the filling secure. Ensure the wrap is tight enough to hold its shape without squeezing the filling out.

              Serve: With a sharp knife, cut each wrap in half diagonally. If desired, secure them with toothpicks to hold them together. Garnish with fresh basil leaves for a fragrant touch.
