Ingredients

1 cup pumpkin puree (canned or fresh)

1/2 cup granulated sugar

1/4 cup brown sugar, tightly packed

1/4 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Optional: Additional cinnamon sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a mini donut pan with non-stick cooking spray to ensure easy release.

Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk these ingredients together until the mixture is smooth and fully blended.

Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Mix these dry ingredients thoroughly to ensure even distribution of the leavening agents and spices.

Combine Mixtures: Gradually incorporate the dry ingredients into the wet mixture. Stir gently until just combined—take care not to overmix, as this can lead to denser donuts.

Fill the Pan: Transfer the batter to a piping bag, or alternatively, use a ziplock bag with one corner snipped off. Pipe the batter into the mini donut pan, filling each cavity about 2/3 full to allow for rising.

Bake: Place the filled donut pan in the preheated oven and bake for 10-12 minutes. The donuts are ready when the edges turn a golden brown and a toothpick inserted into the center comes out clean.

Cool: Allow the donuts to cool in the pan for about 5 minutes. Then, gently remove them from the pan and transfer to a wire rack to cool completely.

Prepare Glaze: In a small bowl, whisk together the powdered sugar and milk until the mixture is smooth. If needed, adjust the thickness by adding more powdered sugar for a thicker glaze or more milk for a thinner one.

Glaze the Donuts: Once the donuts have cooled completely, dip the tops into the glaze, allowing any excess to drip back into the bowl. For an added touch, sprinkle with additional cinnamon sugar while the glaze is still wet.

Serve: Relish these delightful mini pumpkin donuts warm or at room temperature. They pair wonderfully with your favorite cup of coffee or tea!

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: Approximately 24 mini donuts

                        - Presentation Tips: Arrange the glazed donuts on a decorative plate or tiered stand, dust with extra cinnamon sugar, and garnish with small pumpkin decorations for a festive autumn touch. Enjoy!
