1 package phyllo dough cups (store-bought or homemade)

1 cup cherry tomatoes, quartered

1 cup baby spinach, roughly chopped

1 small zucchini, diced into small cubes

1/2 cup red bell pepper, diced

1/2 cup red onion, finely chopped

1 cup feta cheese, crumbled

1/2 cup shredded mozzarella cheese

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and black pepper, to taste

Fresh basil leaves, for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) so it’s ready for the cups.

    Sauté the Vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once the oil is hot, add the minced garlic; sauté for about 30 seconds or until fragrant. Next, incorporate the quartered cherry tomatoes, diced zucchini, red bell pepper, red onion, and chopped baby spinach. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender and the spinach has wilted. Season the mixture with dried oregano, dried thyme, salt, and freshly cracked black pepper to taste.
