1 cup graham cracker crumbs

3 tablespoons granulated sugar

6 tablespoons unsalted butter, melted

1/2 cup freshly squeezed key lime juice (approximately 6-8 key limes)

2 teaspoons lime zest (preferably from key limes)

1 can (14 ounces) sweetened condensed milk

1/4 cup sour cream

1/4 teaspoon salt

2 large egg yolks

For the topping:

1 cup heavy whipping cream

2 tablespoons powdered sugar

Lime slices and additional zest for garnish (optional)

Instructions
 

Prepare the Crust:

    - In a medium mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter, stirring until the mixture has a texture similar to wet sand.

      - Divide approximately 2 tablespoons of this crumb mixture into the bottom of each 4-ounce jar. Press down firmly to create an even crust layer.

        Make the Filling:

          - In a separate bowl, whisk together the key lime juice, lime zest, sweetened condensed milk, sour cream, and salt until the mixture is smooth and well blended. Carefully fold in the egg yolks until fully incorporated.

            Assemble the Jars:

              - Pour the key lime filling into each jar on top of the crust, filling them about two-thirds full. Lightly tap the jars on the counter to eliminate any air bubbles.

                Chill:

                  - Cover each jar with its lid or use plastic wrap. Place them in the refrigerator for at least 4 hours, or preferably overnight, to allow the filling to firm up.

                    Whip the Topping:

                      - Just before you are ready to serve, use an electric mixer to whip the heavy cream and powdered sugar in a clean bowl until stiff peaks form. This will create a light, airy topping.
