1 French baguette, sliced into ½-inch thick rounds

1 medium zucchini, cut into thin rounds

1 red bell pepper, diced into small pieces

1 yellow bell pepper, diced into small pieces

1 small red onion, sliced thinly

1 cup cherry tomatoes, halved

3 tablespoons extra virgin olive oil, divided

1 teaspoon balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon fresh basil, chopped (plus additional for garnish)

Salt and pepper, to taste

4 ounces fresh mozzarella cheese, diced or sliced (optional)

Instructions
 

Preheat the Grill: Begin by preheating your outdoor grill or a grill pan over medium-high heat to ensure it’s ready for cooking.

    Prepare the Vegetables: In a large mixing bowl, combine the sliced zucchini, diced red and yellow bell peppers, and thinly sliced red onion. Drizzle with 2 tablespoons of olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper. Toss the vegetables well until they are thoroughly coated in seasoning.

      Grill the Veggies: Transfer the seasoned vegetable mixture onto the grill. Cook for approximately 8-10 minutes, turning occasionally to ensure even grilling, until the vegetables become tender and develop beautiful grill marks. Once done, remove from the grill and set aside to cool slightly.
