1 package of refrigerated pie crusts (contains 2 crusts)

1 can (21 oz) of cherry pie filling

1 tablespoon cornstarch

1 tablespoon fresh lemon juice

1 teaspoon pure vanilla extract

1 tablespoon granulated sugar (for extra sweetness)

1 large egg (for egg wash)

1 tablespoon milk (for egg wash)

Powdered sugar (for dusting, optional)

Fresh cherries (for garnish, optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a mini muffin tin by lining it with paper liners or spraying it with non-stick cooking spray to prevent sticking.

    Prepare the Filling: In a mixing bowl, combine the cherry pie filling with cornstarch, lemon juice, vanilla extract, and granulated sugar. Gently mix the ingredients until the cornstarch is evenly distributed and everything is well blended. Set the filling aside for the flavors to meld.

      Roll Out the Pie Crusts: On a lightly floured countertop, roll out each pie crust separately. Using a round cookie cutter or the rim of a glass, cut out circles that are approximately 3 inches in diameter.

        Assemble the Bites:

          - Carefully place each dough circle into the prepared mini muffin tin, pressing them gently into the bottom and up the sides to form little cups.

            - Spoon about 1 tablespoon of cherry filling into each crust, being cautious not to overfill them to prevent spillage during baking.

              Create the Top Crust:

                - For a decorative touch, use the remaining pie crust to cut out small shapes (such as stars or hearts) or simply place another round on top of each filled pie. This is optional but adds a charming element.
