Ingredients
  

4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 cup basil pesto

1/4 cup sun-dried tomatoes, finely chopped

1/4 cup black olives, sliced

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional for spice)

Olive oil for brushing

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven:

    Begin by preheating your oven to 375°F (190°C). For easier clean-up, line a baking sheet with parchment paper so your bites don’t stick.

      Prepare the Tortillas:

        On a clean cutting board, take one flour tortilla and lay it flat. Lightly brush one side with olive oil. Flip the tortilla over so the oiled side is now facing down on the cutting board.

          Layer the Ingredients:

            Spread approximately 2 tablespoons of basil pesto evenly across the surface of the tortilla. Next, sprinkle about 1/4 cup of the combined shredded mozzarella and cheddar cheese over the pesto layer. Follow this with a few pieces of finely chopped sun-dried tomatoes and a scattering of sliced black olives. For added flavor, sprinkle garlic powder and optional red pepper flakes over the top.

              Fold and Cut:

                Carefully fold the tortilla in half to create a semi-circle, then fold it in half again to form a triangle. Press down gently to secure the filling inside. Repeat the layering and folding process with the remaining tortillas and ingredients.

                  Bake the Tortilla Bites:

                    Place the folded tortilla triangles on the prepared baking sheet. To achieve a deliciously golden-brown crust, brush the tops lightly with olive oil.

                      Bake:

                        Transfer the baking sheet to the preheated oven and bake for 12-15 minutes. Keep an eye on them until they turn crispy and the cheese is melted and bubbly.

                          Serve:

                            Once baked, remove the tortilla bites from the oven and allow them to cool slightly for about a minute. For bite-sized portions, slice each triangle in half. If desired, top with fresh basil leaves for a pop of color and flavor.
