1 medium head of cauliflower (approximately 2 cups riced)

1 cup shredded sharp cheddar cheese

1/2 cup freshly grated Parmesan cheese

1/2 cup breadcrumbs (substitute with gluten-free if preferred)

2 large eggs, beaten

2 green onions, finely sliced

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

Cooking spray or olive oil, for greasing the baking sheet

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to ensure easy cleanup and prevent sticking.

    Rice the Cauliflower: Remove the leaves and stem from the cauliflower head. Cut it into smaller florets for easier processing. Place the florets into a food processor and pulse for a few seconds until it resembles coarse rice. If a food processor isn't available, you can use a box grater for the same effect.

      Cook the Cauliflower: Transfer the riced cauliflower into a microwave-safe bowl. Cover the bowl with a damp paper towel and microwave on high for about 4-5 minutes until tender. Once cooked, allow it to cool for a few minutes to handle comfortably.

        Remove Excess Moisture: To achieve crispy tots, it’s essential to remove excess moisture from the cooked cauliflower. Take the cooled cauliflower and place it in a clean kitchen towel. Twist the towel tightly to squeeze out as much liquid as possible.

          Combine Ingredients: In a large mixing bowl, combine the drained riced cauliflower with the shredded cheddar, grated Parmesan, breadcrumbs, beaten eggs, sliced green onions, minced garlic, onion powder, garlic powder, smoked paprika, and a generous pinch of salt and pepper. Stir until all ingredients are well incorporated.

            Shape the Tots: Using your hands, scoop the mixture and shape it into small, bite-sized tots (approximately 1.5 inches in size). Arrange them on the prepared baking sheet, leaving space between each tot for even cooking and browning.
