4 small flour tortillas

4 large eggs

1/2 cup shredded cheddar cheese

2 tablespoons fresh cilantro, chopped

Salt and pepper, to taste

Olive oil, for cooking

Prepare the Filling: In a mixing bowl, crack the eggs and whisk them together with a pinch of salt and pepper until well blended. Add the diced bell peppers, onions, crumbled sausage (if you choose to include it), and chopped cilantro into the egg mixture. Stir until all ingredients are evenly incorporated.

    Cook the Egg Mixture: Heat a non-stick skillet over medium heat and drizzle a bit of olive oil to coat the bottom. Pour in the prepared egg mixture and gently stir as it cooks. Continue to cook for about 3-4 minutes until the eggs are just set but still slightly soft. Remove from the heat and allow to cool for a few minutes.

      Assemble the Quesadillas: Lay one flour tortilla flat on a clean surface or cutting board. Spoon a generous amount of the egg mixture onto one half of the tortilla, then sprinkle some shredded cheddar cheese over the egg. Fold the tortilla in half to form a half-moon shape.
