1 cup cooked black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 red bell pepper, finely diced

1 small zucchini, finely diced

1 small red onion, finely diced

1 ripe avocado, diced

1 cup shredded cheddar cheese (or dairy-free alternative)

1 cup BBQ sauce (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

      Roast the Vegetables: Spread the seasoned vegetables in an even layer on a baking sheet. Roast them in the preheated oven for approximately 15-20 minutes, or until they become tender and slightly caramelized, stirring halfway through to ensure even roasting.
