Ingredients
  

1 block (14 oz) firm tofu, well drained and pressed

2 ripe mangoes, peeled and diced

2 cups mixed salad greens (such as arugula, spinach, and baby kale)

1 red bell pepper, thinly sliced

½ cucumber, peeled and thinly sliced

¼ cup red onion, finely sliced

1 ripe avocado, diced

¼ cup fresh cilantro, roughly chopped

2 tablespoons sesame oil

1 tablespoon soy sauce (or tamari for gluten-free)

2 tablespoons fresh lime juice

1 tablespoon honey or agave syrup (optional)

1 teaspoon freshly grated ginger

Salt and pepper to taste

Chopped peanuts or cashews for topping (optional)

Lime wedges, for garnish

Instructions
 

Prepare the Tofu:

    - Cut the pressed tofu into 1-inch cubes.

      - In a medium mixing bowl, combine the sesame oil, soy sauce, lime juice, honey (if using), and grated ginger. Whisk until well mixed.

        - Gently add the tofu cubes to the marinade, ensuring they are well coated. Cover the bowl and let it marinate for at least 15 minutes at room temperature.

          Cook the Tofu:

            - Heat a non-stick skillet over medium-high heat. Add the marinated tofu cubes in a single layer.

              - Sauté the tofu for about 8-10 minutes, turning occasionally, until all sides are golden brown and slightly crispy. Remove from heat and set aside to cool slightly.

                Prepare the Salad:

                  - In a large salad bowl, combine the mixed salad greens, diced mangoes, sliced red bell pepper, cucumber, red onion, diced avocado, and chopped cilantro. Toss gently to mix the ingredients without bruising the greens.

                    Combine and Dress:

                      - Add the sautéed tofu to the bowl of salad ingredients. Pour any remaining marinade over the top. Carefully toss everything together until the salad is evenly mixed and coated with the dressing.

                        Serve:

                          - Taste and season the salad with salt and pepper as desired. For an added crunch, sprinkle chopped peanuts or cashews on top before serving.

                            - Spoon the salad into individual bowls and garnish each serving with fresh lime wedges for a zesty touch.
