    Blend the Base: In a blender or food processor, combine the chopped mangoes and peaches. Add the honey or maple syrup, fresh lemon juice, ground cinnamon (if you choose to use it), and a pinch of salt. Blend the mixture on high speed until you achieve a smooth and silky puree.

      Taste and Sweeten: After blending, taste the fruit puree to check for sweetness. If you find it necessary, add more honey or maple syrup to enhance the flavor according to your preference.

        Prepare the Baking Tray: Preheat your oven to its lowest temperature setting, typically around 140°F to 170°F (60°C to 75°C). Line a baking tray or a rimmed baking sheet with parchment paper, making sure the parchment extends slightly over the edges. This will make it easier to remove the fruit leather after it is dried.

          Spread the Puree: Carefully pour the fruit puree onto the prepared baking tray. Using a spatula or the back of a large spoon, spread the mixture evenly across the tray, aiming for a thickness of about 1/8 inch for optimal drying.
