2 ripe mangoes, peeled and diced into small cubes

1 can (15 oz) black beans, thoroughly rinsed and drained

1 red bell pepper, diced into bite-sized pieces

1/2 medium red onion, finely chopped

1 jalapeño pepper, seeds removed and minced (adjust according to spice preference)

1/4 cup fresh cilantro, roughly chopped

Juice of 2 limes, freshly squeezed

1 teaspoon ground cumin, for a hint of earthiness

Salt and pepper, to taste

Optional: 1 ripe avocado, diced to add creaminess

Prepare the Ingredients: Start by washing your mangoes, red bell pepper, and jalapeño. Peel the mangoes and cut them into small cubes. Dice the red bell pepper and finely chop the red onion. Mince the jalapeño, making sure to adjust the amount based on your desired level of heat. Lastly, chop the cilantro into roughly even pieces.

    Combine Salsa Ingredients: In a large mixing bowl, add the diced mangoes, drained black beans, diced red bell pepper, finely chopped red onion, minced jalapeño, and chopped cilantro. Gently combine with a spatula to avoid mashing the mango.

      Add Seasoning: Squeeze the fresh lime juice over the salsa mixture, then sprinkle in the ground cumin. Season with salt and pepper to taste. Gently mix all the ingredients together until everything is evenly coated in the lime juice and spices.

        Taste and Adjust: Take a moment to taste the salsa, then adjust seasonings as needed. If it needs more acidity, add a little extra lime juice, or enhance the flavor with additional salt or pepper.
