1 cup dried green or brown lentils, rinsed and drained

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon ground cumin

1 teaspoon ground coriander

6 cups vegetable broth

4 cups fresh spinach, roughly chopped

1 medium lemon, juiced (about 2 tablespoons)

Salt and pepper to taste

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onions and sauté for about 5 minutes, or until they turn translucent. Add the minced garlic and cook for an additional minute, stirring continuously until fragrant.

    Add Vegetables: Incorporate the diced carrots and celery into the pot. Sauté the mixture for an extra 5-7 minutes, stirring occasionally, until the vegetables begin to soften and become vibrant.
