Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon cayenne pepper (adjust according to your spice preference)

Salt and pepper, to taste

Juice of 1 lemon (approximately 3 tablespoons)

4 large whole wheat tortillas or wraps

1 cup fresh spinach leaves

½ cup diced cucumber

½ cup cherry tomatoes, halved

¼ cup red onion, thinly sliced

½ cup hummus (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it's ready for roasting.

Prepare the Chickpeas: On a baking sheet, evenly spread out the drained and rinsed chickpeas. Drizzle them with the olive oil, then sprinkle on the paprika, garlic powder, cayenne pepper, and a pinch of salt and pepper. Toss the chickpeas with your hands or a spatula until they are fully coated in the oil and spices.

Roast the Chickpeas: Place the baking sheet in the preheated oven and roast the chickpeas for 25-30 minutes. Be sure to shake the pan halfway through to ensure even crisping. They should turn crispy and golden brown.

Mix the Dressing: While the chickpeas are roasting, prepare your dressing. In a small bowl, whisk together the freshly squeezed lemon juice, a pinch of salt, and a drizzle of olive oil until well combined. This will add a bright, zesty flavor to your wraps.

Assemble the Wraps: Take one tortilla and spread a generous layer of hummus over its surface. Layer the fresh spinach leaves, followed by the roasted chickpeas, diced cucumber, halved cherry tomatoes, and slices of red onion on top of the hummus.

Drizzle the Dressing: Using a spoon, drizzle the prepared lemon dressing over the layered vegetables in each wrap, ensuring a bit of zing in every bite.

Wrap it Up: To enclose the filling, roll the tortilla tightly, folding in the sides as you go to keep the contents secure. If desired, slice the wrap in half for easier handling.

Serve: Garnish your wraps with freshly chopped parsley for a pop of color and freshness. Serve them immediately for a delightful lunch or dinner or wrap them in foil for a nutritious meal on-the-go.
