Ingredients

1 ½ cups grated zucchini (from about 1 medium zucchini, moisture squeezed out)

1 cup all-purpose flour

½ cup whole wheat flour

½ cup granulated sugar

½ cup packed brown sugar

¼ cup poppy seeds

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

3 tablespoons fresh lemon juice

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing it with oil or butter, or line it with parchment paper to facilitate easy removal of the bread.

Prepare the Zucchini: Grate the zucchini using a box grater or food processor until finely shredded. Transfer the grated zucchini onto a clean kitchen towel, roll the towel up tightly, and twist it to remove as much moisture as possible. This step ensures that your bread has the perfect texture.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, whole wheat flour, poppy seeds, baking soda, baking powder, salt, and ground cinnamon. Use a whisk to mix these dry ingredients thoroughly, ensuring they are evenly distributed, then set the bowl aside.

Combine Wet Ingredients: In a separate bowl, combine the vegetable oil (or melted coconut oil), granulated sugar, packed brown sugar, eggs, vanilla extract, lemon zest, and lemon juice. Whisk these wet ingredients together until the mixture is smooth and well-blended.

Combine Mixtures: Gently pour the wet mixture into the bowl with the dry ingredients. Using a spatula, mix until just combined, being careful not to overmix; a few lumps are okay.

Incorporate Zucchini: Carefully fold the moisture-squeezed grated zucchini into the batter, ensuring it's distributed evenly throughout without overworking the mixture.

Pour Batter into Pan: Scrape the batter into the prepared loaf pan, using a spatula to smooth out the top for an even bake.

Bake: Place the loaf pan in the preheated oven and bake for 50-60 minutes. You'll know it's done when a toothpick inserted in the center comes out clean. If the top turns golden too quickly, loosely cover it with aluminum foil halfway through the baking time.

Cool Down: After baking, remove the loaf from the oven and allow it to cool in the pan for about 10-15 minutes. Then, carefully transfer it to a wire rack to cool completely—this will help maintain its texture.

Slice and Serve: Once completely cooled, slice the zucchini bread into pieces. It’s delightful enjoyed on its own or topped with butter or cream cheese. Pair it with a cup of tea or coffee for a refreshing treat!
