Lemon Herb Grilled Salmon with Asparagus

4 salmon fillets (approximately 6 oz each)

1 bunch of fresh asparagus (about 1 lb)

3 tablespoons olive oil

Zest and juice of 2 lemons

2 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh dill, finely chopped

Salt and freshly cracked black pepper, to taste

Lemon wedges, for serving

Prepare the Marinade: In a medium mixing bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, chopped dill, salt, and freshly cracked black pepper. Whisk the mixture vigorously until all ingredients are well incorporated and emulsified.

    Marinate the Salmon: Place the salmon fillets in a shallow dish or resealable plastic bag. Pour half of the prepared marinade over the fillets, ensuring that each piece is thoroughly coated. Cover the dish or seal the bag and refrigerate for at least 20 minutes to allow the flavors to infuse.

      Prepare the Asparagus: Wash the asparagus and snap off the tough, woody ends. Arrange the asparagus on a baking sheet. Drizzle with olive oil and a pinch of salt and pepper. Use your hands to toss the asparagus gently until they are evenly coated.

        Preheat the Grill: Heat your grill to medium-high heat (around 400°F or 200°C). If you are using a grill pan on the stovetop, preheat it over medium-high heat until it's hot.

          Grill the Salmon: Remove the salmon fillets from the marinade and place them skin-side down on the hot grill. Grill for approximately 4-6 minutes per side, depending on the thickness of the fillets. The salmon should be opaque and flake easily with a fork, with attractive grill marks on the surface.

            Grill the Asparagus: While the salmon is cooking, add the prepared asparagus to the grill. Grill for about 5-7 minutes, turning occasionally, until they become tender and have a slight char.
