1 pound large shrimp, peeled and deveined

4 tablespoons olive oil, divided

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon red pepper flakes (adjust according to heat preference)

For the Zucchini Noodles:

4 medium zucchinis, spiralized into noodles

1 tablespoon olive oil

Salt and pepper, to taste

1/4 cup freshly grated Parmesan cheese (optional for serving)

Instructions
 

Prepare the Zucchini Noodles:

    - Use a spiralizer to transform the zucchinis into long, thin noodles (zoodles). Set the zucchini noodles aside on a plate.

      - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the spiralized zucchini. Season with salt and pepper, then sauté for about 2-3 minutes until they are slightly tender but still have a bit of crunch. Remove from the skillet and place on a separate plate to keep warm.

        Cook the Shrimp:

          - In the same skillet, add the remaining 3 tablespoons of olive oil and heat over medium-high.
