2 tablespoons fresh parsley, finely chopped (for garnish)

For the Broccoli Rice:

2 cups broccoli florets (fresh or frozen)

1 tablespoon olive oil

1/2 cup onion, finely chopped

2 cloves garlic, minced

Salt and black pepper, to taste

Juice of 1/2 a lemon (optional, for an extra citrus kick)

Instructions
 

Prepare the Broccoli Rice:

    - If you're using fresh broccoli, steam or microwave the florets until they are tender. Once cooked, allow them to cool slightly, then transfer to a food processor and pulse until the mixture resembles rice grains. If you're using frozen broccoli, ensure it's thawed and drain any excess water from it.

      - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, about 3-4 minutes.

        - Incorporate the minced garlic into the skillet and cook for another minute, until it becomes fragrant.

          - Add the processed broccoli to the skillet, stirring well to combine. Cook for about 5 minutes, seasoning it with salt and black pepper to taste. If you prefer an extra burst of citrus flavor, you can squeeze in the juice of 1/2 a lemon at this stage. Remove from heat and keep warm.

            Cook the Shrimp:
