1 lb large shrimp, peeled and deveined

3 cups fresh spinach, thoroughly washed and drained

4 cloves garlic, finely minced

1 lemon, juiced and zested

1/4 cup extra virgin olive oil

1/2 teaspoon red pepper flakes (adjust according to your heat preference)

Salt and black pepper, to taste

1 cup cooked quinoa or brown rice (optional, for serving)
