Lemon Dill Salmon Patties

Ingredients
  

2 cans (14.75 oz each) of pink salmon, drained and flaked

1 cup breadcrumbs (choose either panko for extra crunch or regular)

1/4 cup fresh dill, finely chopped (or 2 tablespoons dried dill for convenience)

1/2 cup green onion, finely chopped

1 large egg, lightly beaten

2 tablespoons fresh lemon juice

Zest of 1 lemon

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

3 tablespoons olive oil (for frying)

Optional: Fresh lemon wedges for serving

Instructions
 

In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped dill, green onion, beaten egg, lemon juice, lemon zest, garlic powder, salt, and black pepper. Use a fork or spatula to gently mix until all ingredients are thoroughly combined, being careful not to overwork the mixture.

    Using your hands, portion out the mixture and form it into patties about 2-3 inches in diameter and approximately 1 inch thick. You should end up with around 8-10 patties, depending on how large you shape them.

      Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot and shimmering, carefully place half of the salmon patties into the skillet without crowding them.

        Cook the patties for about 4-5 minutes, or until the bottom-side is golden brown. Gently flip each patty using a spatula, and if needed, add the remaining tablespoon of olive oil to the skillet before continuing to cook.

          Cook the flipped patties for an additional 4-5 minutes, or until they are fully cooked and have developed a nice crust on both sides.

            Remove the cooked patties from the skillet and transfer them to a plate lined with paper towels to absorb any excess oil. Repeat the cooking process for the remaining patties.

              Serve the salmon patties warm, accompanied by fresh lemon wedges on the side. The lemon wedges will enhance the flavor with a refreshing citrusy kick. Enjoy your delectable lemon dill salmon patties!
