Ingredients

4 salmon fillets (approximately 6 ounces each)

4 tablespoons unsalted butter, melted

2 lemons (one sliced, one for juicing)

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

1 cup cherry tomatoes, halved

1 cup asparagus, trimmed

1 cup baby spinach

Instructions

Preheat: Begin by preheating your grill or oven to 400°F (200°C) to ensure even cooking for your salmon packs.

Prepare Foil: Cut four pieces of aluminum foil, each about 12 inches long. Lay them flat on a clean workspace to make assembly easier.

Place Salmon: Position one salmon fillet in the center of each piece of foil. Season each fillet generously with salt and black pepper for enhanced flavor.

Make Lemon Butter Mixture: In a small mixing bowl, whisk together the melted butter, juice from one lemon, minced garlic, oregano, and thyme until well combined. Drizzle this aromatic mixture evenly over each salmon fillet.

Add Vegetables: Surround the salmon fillets with the halved cherry tomatoes and trimmed asparagus. Distribute the lemon slices on top of each fillet and finish with a handful of baby spinach for a pop of color and nutrition.

Seal the Packs: Fold the sides of the aluminum foil over the salmon and vegetables, pinching the edges together to create a secure, tight seal. This prevents steam from escaping and retains the wonderful flavors inside.

Cook: Carefully place the foil packs on your preheated grill or in the oven. Cook for approximately 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender yet crisp.

Serve: Once cooked, carefully open the foil packs (be cautious of the hot steam!) and finish by garnishing with freshly chopped parsley. Serve immediately for a delightful meal.
