Ingredients

4 boneless, skinless chicken breasts (approximately 1.5 pounds)

Salt and black pepper, to taste

1/2 cup all-purpose flour, for dredging

4 tablespoons olive oil, divided

4 tablespoons unsalted butter, divided

1 cup low-sodium chicken broth

1/2 cup fresh lemon juice (from about 2-3 lemons)

1/2 cup capers, rinsed and drained

2 cloves garlic, minced

1/4 cup fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions

Prepare the Chicken: Begin by seasoning both sides of the chicken breasts generously with salt and black pepper. Next, dredge each chicken breast in all-purpose flour, making sure to shake off any excess flour to create a light coating.

Sear the Chicken: Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil along with 2 tablespoons of unsalted butter. Once the mixture is hot and bubbling, carefully add the seasoned chicken breasts to the skillet. Cook for about 4-5 minutes on each side until they are a beautiful golden brown and thoroughly cooked. To ensure they are safe to eat, the internal temperature should reach 165°F (75°C). Once cooked, remove the chicken from the skillet and set aside on a plate.

Make the Sauce: In the same skillet, add the remaining 2 tablespoons of olive oil along with the minced garlic. Sauté the garlic for approximately 30 seconds, stirring constantly, until it becomes fragrant and slightly golden. Next, pour in the chicken broth and fresh lemon juice, followed by the capers. Use a spoon or spatula to stir the mixture well, scraping up any delicious browned bits from the bottom of the pan.

Reduce the Sauce: Bring the sauce to a gentle simmer and allow it to cook for about 5-7 minutes. This will thicken the sauce slightly and intensify the flavors.

Add Butter for Richness: Lower the heat to a simmer and stir in the remaining 2 tablespoons of butter. Allow the butter to melt completely, mixing it into the sauce for added richness.

Return Chicken to the Pan: Once the sauce is ready, return the seared chicken breasts to the skillet, spooning the fragrant sauce over the top of each piece. Let the chicken warm through in the sauce for about a minute.

Serve: Transfer the chicken breasts to a serving platter and generously drizzle the lemon caper sauce over them. For an elegant touch, garnish with freshly chopped parsley and lemon slices.

Enjoy: Serve your delightful Lemon Butter Chicken Piccata over a bed of pasta, fluffy rice, or beside a vibrant array of steamed vegetables for a complete meal experience.
