Ingredients
  

1 cup couscous

1 1/4 cups water or low-sodium chicken broth

1 pound boneless, skinless chicken breasts

2 tablespoons olive oil

Juice and zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper, to taste

1/2 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/2 cup fresh basil leaves, roughly chopped

1/4 cup feta cheese, crumbled (optional)

Instructions
 

Cook the Couscous:

    - In a medium saucepan, combine the water or chicken broth and bring it to a rolling boil.

      - Once boiling, remove the pot from heat and stir in the couscous. Cover the pot and let it sit undisturbed for 5 minutes.

        - After the resting period, fluff the couscous gently with a fork and set aside to cool completely.

          Prepare the Chicken:

            - In a small mixing bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, and pepper to create a marinade.

              - Place the chicken breasts in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and let them marinate in the refrigerator for at least 30 minutes to absorb the flavors.

                Cook the Chicken:

                  - Preheat your grill or a skillet over medium heat.

                    - Remove the chicken breasts from the marinade and discard the remaining marinade.

                      - Grill or sauté the chicken for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C). Once cooked, transfer the chicken to a plate and let it rest for 5 minutes before slicing it into bite-sized pieces.

                        Assemble the Jars:

                          - Gather clean, dry mason jars for assembly.

                            - For each jar, first layer in about one-third cup of cooled couscous as the base.

                              - Next, add a layer of sliced chicken (about one chicken breast per jar).

                                - Follow with layers of halved cherry tomatoes, diced cucumber, finely chopped red onion, and roughly chopped fresh basil.

                                  - If desired, finish with a sprinkle of crumbled feta cheese on top of each jar for an added flavor kick.

                                    Seal and Store:

                                      - Securely seal the mason jars with their lids and store in the refrigerator for up to 3 days.
