1 lb (450g) boneless, skinless chicken thighs, sliced into thin strips

2 tablespoons vegetable oil

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 medium onion, thinly sliced

2 cups broccoli florets

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup honey

1/4 cup Sriracha sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (cornstarch slurry)

Salt and pepper to taste

Cooked jasmine rice or noodles, for serving

Chopped green onions and sesame seeds for garnish

Instructions
 

Prepare the Sauce: In a small mixing bowl, combine the honey, Sriracha sauce, soy sauce, rice vinegar, and cornstarch slurry. Whisk thoroughly until smooth and well blended. Set aside for later use.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is shimmering, add the sliced chicken. Season with salt and pepper to enhance the flavor. Stir-fry the chicken for approximately 5-7 minutes, or until the meat is cooked through and turns a nice golden brown. Once done, remove the chicken from the pan and place it on a plate. Set aside.
