Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1/2 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 cup panko breadcrumbs

Fresh parsley, chopped, for garnish (optional)

Lemon wedges, for serving

Instructions

Prepare the Marinade: In a medium-sized mixing bowl, thoroughly whisk together the honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper until you achieve a smooth and well-blended mixture.

Marinate the Chicken: Place the bite-sized chicken pieces into the bowl with the marinade. Ensure that every piece is evenly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. For an enhanced flavor experience, allow it to marinate for up to 2 hours.

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.

Coat the Chicken: After marinating, remove the chicken from the refrigerator and let any excess marinade drip off. In a shallow dish, place the panko breadcrumbs. Gently coat each piece of chicken in the breadcrumbs, pressing down lightly to ensure that they adhere well.

Bake the Chicken Bites: Lay the coated chicken bites in a single layer on the prepared baking sheet. For additional crispiness, lightly spray the tops with cooking spray or drizzle with a little olive oil. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the coating is a beautiful golden brown.

Serve and Enjoy: Once baked, remove the chicken bites from the oven and allow them to cool for about a minute. Sprinkle with chopped fresh parsley for a pop of color and serve with lemon wedges on the side to add a refreshing zing.
