Ingredients

1 lb boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup Italian-style breadcrumbs

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon salt

½ teaspoon black pepper

½ cup marinara sauce

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

12 slider buns

Fresh basil leaves (for garnish)

Olive oil (for frying)

Instructions

Prepare the Chicken: Preheat your oven to 375°F (190°C). Carefully slice the chicken breasts horizontally into thin cutlets, ensuring each cutlet is of uniform thickness for even cooking.

Set Up Dredging Stations: Create a dredging assembly line with three shallow dishes. In the first dish, combine the all-purpose flour with ½ teaspoon of salt and black pepper. In the second dish, whisk together the eggs until well beaten. In the third dish, mix the breadcrumbs with garlic powder and dried oregano to infuse extra flavor.

Coat the Chicken Cutlets: Take each chicken cutlet and dip it first into the seasoned flour, allowing the excess to fall away. Next, immerse it in the egg mixture, then transfer it to the breadcrumb mixture, pressing lightly to ensure a thorough coating.

Fry the Chicken: In a large skillet, add enough olive oil to create a ¼ inch depth in the pan, heating it over medium-high. Once the oil is hot but not smoking, carefully add the chicken cutlets in batches—avoid overcrowding the pan. Fry each cutlet for about 3-4 minutes on each side, or until they are golden brown and cooked through. Remove from the skillet and let them drain on a paper towel-lined plate to absorb excess oil.

Assemble the Sliders: Take the bottom half of each slider bun and spread a generous spoonful of marinara sauce over it. Place one fried chicken cutlet on top of the sauce, followed by a sprinkle of shredded mozzarella and grated Parmesan cheese.

Bake the Sliders: Arrange the assembled sliders on a baking sheet. Place them in the preheated oven and bake for approximately 10-12 minutes, or until the cheese is melted, bubbly, and lightly golden.

Garnish and Serve: After baking, remove the sliders from the oven. Top each slider with a fresh basil leaf for a vibrant touch. Place the top half of the slider buns on and serve immediately while warm.
