Hearty Chicken and Sweet Potato Casserole

2 cups cooked chicken, shredded or diced

2 large sweet potatoes, peeled and diced into ½-inch cubes

1 cup yellow onion, finely diced

2 cloves garlic, minced

1 cup broccoli florets (fresh or frozen)

1 cup shredded sharp cheddar cheese

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ cup low-sodium chicken broth

¼ cup milk (can use whole or low-fat)

½ cup Greek yogurt or sour cream

½ cup panko breadcrumbs

2 tablespoons fresh parsley, chopped (for garnishing)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for baking.

    Cook Sweet Potatoes: In a large pot, place the diced sweet potatoes and cover them with enough water. Bring to a boil over medium-high heat. Cook for about 10 to 15 minutes, or until the sweet potatoes are fork-tender. Drain the potatoes and set them aside.

      Sauté Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 4-5 minutes, or until it becomes translucent. Then, stir in the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: In a spacious mixing bowl, combine the shredded chicken, cooked sweet potatoes, sautéed onions and garlic, broccoli florets, chicken broth, milk, Greek yogurt, smoked paprika, dried thyme, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.

          Transfer to Casserole Dish: Pour the chicken and sweet potato mixture into a greased 9x13-inch casserole dish. Spread the mixture evenly to ensure it bakes uniformly.
