2 cans (5 oz each) tuna packed in water, well drained

1/4 cup Greek yogurt (choose plain or your favorite flavor)

1 tablespoon Dijon mustard

1 tablespoon freshly squeezed lemon juice

1/2 cup cucumber, diced

1/4 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

Salt and freshly ground black pepper to taste

8 large leaves of romaine or butter lettuce

Optional toppings: sliced avocado, halved cherry tomatoes, or pitted olives
