1 lb boneless, skinless chicken breasts

2 tablespoons extra virgin olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

2 cups cooked brown rice or quinoa (your choice)

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 red bell pepper, diced

1 cup baby spinach or a mix of greens

½ red onion, thinly sliced

½ cup feta cheese, crumbled

Fresh parsley or dill for garnish

For the Tzatziki Sauce:

1 cup plain Greek yogurt

½ cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon extra virgin olive oil

1 tablespoon fresh lemon juice

1 tablespoon fresh dill or mint, chopped

Salt and freshly ground black pepper, to taste

Prepare the Chicken Marinade: In a mixing bowl, combine the olive oil, dried oregano, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken breasts to the bowl, ensuring they are well coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or for optimum flavor, marinate overnight.

    Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Once hot, remove the chicken from the marinade and place it in the pan. Cook for approximately 6-7 minutes on each side, or until the chicken is fully cooked through (the internal temperature should reach 165°F / 74°C). Once cooked, transfer to a plate and let the chicken rest for a few minutes before slicing it into strips.

      Make the Tzatziki Sauce: In a medium-sized bowl, mix together the Greek yogurt, grated cucumber (that has been drained of excess water), minced garlic, olive oil, fresh lemon juice, and the chopped dill (or mint). Stir until all ingredients are thoroughly combined. Season with salt and pepper to taste, and chill in the refrigerator until you’re ready to serve.
