8 oz whole grain or gluten-free pasta (such as fusilli or penne)

1 lb boneless, skinless chicken breasts

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

½ red onion, finely chopped

¼ cup fresh cilantro, chopped (or substitute with parsley if desired)

¼ cup feta cheese, crumbled (optional for added flavor)

3 tbsp olive oil

1 tbsp fresh lemon juice

1 tsp garlic powder

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the whole grain pasta and cook according to the package directions until al dente. Once cooked, drain the pasta and rinse it under cold water to quickly cool it down. Set it aside to ensure it doesn't clump together.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts generously with salt, pepper, and garlic powder. In a skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the chicken breasts and cook for approximately 6-7 minutes on each side, or until they are cooked through and golden brown on the outside.
