1 cup grated carrots (approximately 2 medium-sized carrots)

½ cup almond butter (or substitute with peanut butter if desired)

¼ cup honey or maple syrup (for a vegan option)

½ cup unsweetened applesauce

1 teaspoon pure vanilla extract

1 teaspoon ground cinnamon

½ teaspoon baking powder

¼ teaspoon salt

½ cup raisins or dried cranberries (optional for added sweetness)

¼ cup chopped nuts (such as walnuts or pecans; optional for crunch)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8-inch baking pan by lining it with parchment paper, ensuring there is some overhang around the edges for easy bar removal after baking.

    Combine Wet Ingredients: In a large mixing bowl, add the almond butter, honey (or maple syrup), applesauce, and vanilla extract. Use a whisk to blend these ingredients together until the mixture is completely smooth and well incorporated.

      Mix Dry Ingredients: In a separate mixing bowl, combine the rolled oats, grated carrots, ground cinnamon, baking powder, and salt. If you're choosing to add raisins or chopped nuts for extra flavor and texture, mix those in with the dry ingredients as well.

        Incorporate Mixtures: Gradually incorporate the dry mixture into the wet mixture. Stir gently until everything is just combined and the oats are thoroughly coated with the wet ingredients.
