4 medium sweet potatoes

1 pound ground turkey

1 cup Hatch green chiles, diced (fresh or canned)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

1 cup shredded cheese (cheddar or Monterey Jack)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Bake the Sweet Potatoes: Wash the sweet potatoes thoroughly under running water. Using a fork, pierce several holes all over each potato (to allow steam to escape while baking). Arrange them on a baking sheet lined with parchment paper. Bake in the preheated oven for 45-60 minutes, or until they are soft and easily pierced with a fork.

      Cook the Turkey Filling: While the sweet potatoes are baking, heat a large skillet over medium heat. Add the ground turkey and cook, breaking it apart with a spatula, for about 5-7 minutes or until browned and fully cooked through (no longer pink).

        Add the Vegetables: Once the turkey is cooked, add in the diced Hatch green chiles, rinsed black beans, corn, ground cumin, smoked paprika, garlic powder, onion powder, and a sprinkle of salt and black pepper. Stir the mixture well and continue cooking for an additional 5-10 minutes, allowing the flavors to meld and the filling to heat thoroughly. Taste and adjust the seasoning as necessary.
